Skillet cornbread may be the best kind to serve, as it cooks up with a toasty bottom and tender middle. I love to top mine with garden tomatoes and chopped rosemary to hold onto every last bit of summer. On summer days, I look forward to checking the tomato vines, watching jalapeño flowers transform into peppers, and grilling as much zucchini as possible. I hold onto the season as I make overflowing salads and enjoy the abundance that only late summer holds. Often I combine what is ready to be picked into my ultimate cold pasta salad, which can be served for dinner as easily as lunch. Gold Summer Salad with Grilled Squash, Corn, Roasted Peppers, and Tomatoes
This may be the most cheerful salad my table has seen all summer. With golden shades of the season’s vegetables, it features roasted peppers, tiny sweet tomatoes, and grilled squash and corn. Dressed with vinaigrette and served with herbed ricotta, it’s bright in flavor and beautiful to serve. While the vegetables are monochromatic, their textures and flavors are anything but similar. Even the squash and corn, both cooked on a grill or in a grill pan, respond differently to the same application of heat. Where the squash softens, the corn becomes crisp-tender. Asiago Polenta Sticks with Rosemary Salt
Baked until the outside is crispy but the inside retains its creamy texture, a polenta stick gives you the best of both ways to eat this Italian staple. Often we think of polenta as a porridge served warm, but it can be grilled or baked to become a crisp surface for a host of toppings or a way to sop up every delicious drop of a pan sauce that’s lingering on the plate.
