Tortellini Salad with Asparagus and Sun-Dried Tomatoes
Green, how I want you green. Green wind. Green branches. – Federico García Lorca Spring jolts us with awakenings, fresh flavors, and everything green arriving at the market. For that reason, I choose spinach-filled tortellini and spears of asparagus when making this dish, which can be served room temperature or cold. With both green ingredients in season, consider this the ideal way to start cooking with a fresh crop of vegetables. Set this on the table for dinner or as a side dish and be reminded of the stirrings in the ground and in ourselves. Ingredients ⅓ cup extra-virgin olive oil2 tablespoons balsamic vinegar2 teaspoons red wine vinegar¾ teaspoon honey¼…

Summer Pasta Salad
On summer days, I look forward to checking the tomato vines, watching jalapeño flowers transform into peppers, and grilling as much zucchini as possible. I hold onto the season as I make overflowing salads and enjoy the abundance that only late summer holds. Often I combine what is ready to be picked into my ultimate cold pasta salad, which can be served for dinner as easily as lunch. Sweet corn from the farmers’ market and other gathered vegetables make this dish a true celebration of everything that is summer. In my creative salads cooking classes, we explore recipes and methods using garden fresh ingredients. Each forkful of this summer pasta salad…

Pasta e Fagioli Soup with Chard
A rustic Italian soup made with pasta and beans, pasta e fagioli is a classic dish to which I add greens for extra flavor and nutrition. Even though I use mainly the leaves in this tomato-based recipe, I tend to make it with rainbow chard versus white-stemmed Swiss chard because the bright colors extend from the stems through the leaf veins, adding even more color to each bowl. If you’ve ever had a bland version of this soup or found the pasta to be too soft, try this recipe, perhaps when you’re craving a tomato soup with some tasty extras. The method and ingredients result in a satisfying meal perfect…

Potato Gnocchi
Pillowy potato gnocchi pan-seared in butter and garlic sauce, maybe even tossed with some wilted spinach, may be one of the simplest yet most satisfying dinners. Yes, it takes a little work to prep these Italian dumplings, but the rewards are great enough to attempt this dish on your own. Homemade gnocchi are nothing like their store-bought counterparts, which often have very little potato flavor. Once you get the hang of it, I think you’ll be craving these on the regular. Ingredients 2 pounds russet potatoes 2 egg yolks ¾ teaspoon salt ¾ cup flour (plus more for shaping the dough and dusting the counter) Even if you’re hesitant about…

Ruby Pasta
Rich, ruby-toned pasta works with the strengths of the red beet, which likes to stain everything it touches. If you’ve ever cooked with beets and lamented the marks they left on your wood cutting board, fingers, and possibly apron, this is your opportunity to let their ruby red juices work to your advantage. In fact, all elements of this recipe work with the essential qualities of the subtly sweet, earthy beet. To play up those sweet qualities and brighten them, I opted to add crushed fennel seed and marjoram, a delicate aromatic herb that is best introduced toward the end of cooking. Citrus also works well to brighten up the…
